
I had the pleasure of interviewing Sandra Durbin of Sandra’s Cakes. Sandra has been very busy recently opening her cake studio yet she was kind enough to take a few moments to answer some of my questions.
1. How did you get started in cake decorating?
I was introduced to cake decorating in 2006 by my cousin Loreana who one night taught me how to make marshmallow fondant. We each decorated a small cake and after I was done, I thought, “not bad” for being the first time ever decorating a cake. After that, I started making cakes for family affairs and doing lots of research. I tried quite few recipes until I found and modified the ones I loved. Now 4 years later, I will be opening my own cake studio!
2. How long of you been decorating cakes?
I have been decorating cakes for about 3 1/2 years.
3. Do you or have you ever taken cake decorating courses? If so, what types of courses and where did you take them?
I have not taken any classes. I have a natural talent that is a gift from God.
4. Do you sell your cakes? If not, do you plan to in the future?
I will sell my cakes soon to the general public, hopefully no later than the end of July 2010.
6. What is the best tip you could offer someone just getting started in cake decorating?
The best advice I could give to someone starting to decorate cakes is to practice, practice and practice. Also, I do appreciate other artists work, so I respect the time and talent they put into each creation and do not replicate their work. If someone comes with a photo of a cake, I will give the author credit. So be creative and don’t copy someone else’s exact work. The internet has an abundance of resources as well as your local library. If you can’t buy your own books, visit the library!
7. What decorating method (fondant, sugar paste, buttercream, etc.) do you use most often and why?
I love working with fondant. Once I cover a cake with fondant, it becomes my canvas to create an edible work of art!

8. What is the biggest mistake you have ever made while decorating a cake?
Fortunately I have not made any huge mistakes that could not be fixed. I do recall using the wrong color on a cake, however, it was a small birthday cake and they were still very happy with it!
9. I know this is a hard question, but if you were to chose just one of your cake designs as being your all-time favorite, which would it be and why?
I love creating all kinds of cakes, but usually kids cakes can be the most rewarding. I get to be so creative with colors and design and at the end, the kids happy faces are most rewarding. Each time I make a kid’s cake, it becomes my new favorite! SpongeBob cakes are among the top favorite cakes for me!
